Cranberry Oatmeal Pecan Cookies

COOKIES

  • 1½ cups organic coconut sugar
  • ¾ cup organic refined coconut oil
  • 2 large organic eggs
  • 1 tsp. organic vanilla
  • 1¾ cup organic all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. organic ground cinnamon
  • ½ tsp. salt
  • 2 cups organic quick oats
  • 1 cup organic dried cranberries
  • 1 cup organic pecans, coarsely chopped
  • 1 cup organic semi-sweet chocolate chips
  • Zest of 1 orange (optional)

Preheat oven to 375°F. Line a cookie sheet with parchment paper or baking mat. In a large bowl, cream together sugar and oil. Beat in eggs and vanilla. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Stir mix into creamed mixture until just combined. Stir in oats, cranberries, pecans, chocolate chips, and orange zest (if desired). Drop by rounded tablespoons full onto prepared cookie sheet. Flatten cookies slightly. Bake for 8 to 10 minutes.
