Chocolate COCONUT MACAROONS

MACAROONS

  • 1 (10 oz.) pouch organic sweetened flake coconut
  • ½ cup organic cane sugar
  • ¼ cup organic cocoa powder
  • ¼ tsp. salt
  • 3–4 organic egg whites
  • 1 tsp. organic vanilla extract
  • ½ cup organic chocolate baking chips, optional

Preheat oven to 350°F. Line a rimmed baking pan with a silicone baking mat or parchment paper. In a medium bowl, stir together coconut, sugar, cocoa, and salt. Add egg whites and vanilla. Stir until well combined. Mixture should have just enough moisture to come together. If desired, stir in solid or melted chocolate chips for an extra fudgy flavor and texture. Scoop out golf ball sized portions and place on prepared pan. Bake at 350°F for about 20 minutes.

 

For Traditional Coconut Macaroons,

replace the cocoa powder for equal parts flour.
